RAW FUDGEY BROWNIE CUPS

Happy Monday!


What a perfect time of the week to share a recipe with you! Perfect for every chocolate lover and anyone who does not mix well with baking. These are my raw fudgey brownie cups that are a NO-BAKE recipe, all you gotta do is pop em' in the freezer and let the cold air do the dirty work while you sit back and let the magic happen.


RAW Fudgey Brownie Cups


Crust

1.5 cup Bob's Red Mill gluten free oats

4 tbsp Organic Traditions cacao powder

25 pitted dates


Blend the 3 ingredients together (blender or food processor) and add 1 tbsp (at a time) of filtered water or nut milk of choice until you get a good sticky crust formed. Put into muffin pan. Size doesn’t matter, whatever you feel like. If you'd rather do less...make these in a glass pan and cut into bars after you take them out of the freezer!


Topping

1 cup Nuts to You Cashew Butter

2-3 tbsp Organic Traditions Cacao Powder

3 scoops Genuine Health Clean Collagen Unflavoured (use code NOURISH15 for 15% off at checkout)

4 tbsp cashew milk (add more if consistency is too thick-make sure it’s still a “nut butter” consistency)

2 tbsp sweetener of choice (I chose Canadian Heritage Maple syrup)

Blend the chocolate layer ingredients together.

Remove from blender and pour/scoop onto the pan and press firmly into crust

Put into freezer for 1 hour to harden.

Store in airtight glass container in the fridge for up to 10 days or store in freezer for easy treats for up to 3 months! If you store in freezer, pull out ahead of time and put in fridge to thaw, then enjoy.

Makes about 10 cups .
